The second weakness that you pointed out, regarding why Ennis changed his sex orientation, is debatable.
Like any other gene expression, certain environment may be more suitable to “turn on” the expression of the “gay genes” (if we can call them that way). So with the gay genes imbedded, Ennis can still start as a straight man. The gay genes might be fully switched on after Ennis started the sexual relationship with Jack. In other words, Ennis’ relationship with Jack might catalyzed the expression of the gay genes.
